With it comes the anticipation of cozy gatherings, heartwarming moments and the comforting flavors of the holiday season. In addition to all these joys, November is also Diabetes Awareness Month, making it the perfect time to raise awareness while enjoying the festivities.
I am excited to bring you a delightful treat that perfectly embodies the essence of fall — a diabetic-friendly pumpkin bread recipe that allows everyone to indulge in the joy of Thanksgiving without compromising health. It’s time to celebrate the holidays and Diabetes Awareness Month without missing out on the pleasures of a classic pumpkin treat.

Ingredients
- 2 cups Blanched Almond Flour
- 1/2 cup Coconut Flour
- 1/2 cup Monk Fruit Allulose Blend
- 2 tsp Pumpkin pie spice
- 1/2 Tbsp Baking powder
- 1/4 tsp Salt
- 3/4 cup 100% Pure pumpkin puree
- 4 Large eggs (lightly beaten)
- 1/3 cup Unsalted melted butter (use coconut oil for dairy-free)
- 2 Tbsp Pumpkin seeds (raw, unsalted, shelled)
Instructions |
1: Preheat the oven to 325 degrees Fahrenheit. Line an 8x4 (20 cm x10 cm) loaf pan with parchment paper, so that the paper hangs over two opposite sides (for easy removal later). 2. In a large bowl, mix together the almond flour, coconut flour, monk fruit allullose blend, pumpkin pie spice, baking powder, and sea salt. |
3. Add the pumpkin puree, eggs, and melted butter. Mix until well combined. |
4. Transfer the batter into the lined loaf pan and press evenly to make a smooth top. Sprinkle the top with pumpkin seeds and press them lightly into the surface. |
5. Bake for 45-55 minutes, until an inserted toothpick comes out clean. Cool in the pan for 15 minutes, then transfer to a rack to cool completely before slicing. Nutrition Facts per serving: 159 calories, 13.3g fat, 5.6g protein, 6.5g Total carbs, 3.2g Net carbs, 3.3g fiber, 1.2g Sugar. |
